I Climb Mountains and I Don't Want Pizza!

Recently, my two sons, my brother, and I went hiking up the rocky cliffs overlooking Devil’s Lake, near the Wisconsin Dells. The climb was steep and strenuous, but the view at the summit overlooking the bluffs was gorgeous; well worth the physical exertion that was expended to capture its magnificence.

Three years ago, when I was obese, and carrying around almost a hundred extra pounds, I could only make it a third of the way up due to shortness of breathe and exhaustion.

Unfortunately, I never got to see the breathtaking views from the summit. In fact, past a certain point in the climb, one never sees an obese person.

Not only did I make it to the summit with little effort this time, that evening I asked my 20-year-old son if he’d like to go back, and watch the sunset with me.

We reached the summit in record speed, just as the sun was beginning to melt into the earth, and the picture of me above, on the right, was taken immediately afterwards.

At that moment, I vividly recalled one person’s response to the infamous, “How did you do it?” question that many, including complete strangers, have asked me throughout this past year of getting my health back.

After telling the basics of being a nutritarian, I recall one person emphatically exclaimed, “Oh, I could never give up pizza!”

Give up pizza? Ha. She had absolutely no clue.

I didn’t give up pizza. I don’t want pizza!

Because I eat high nutrient dense foods, my body has become so well nourished that it no longer craves junk. In fact, now, a year later, pizza sounds repulsive to me, and doesn’t even enter the radar screen of desire, because the addictive craving for high fat, low nutrient, processed food is completely gone.

Being a nutritarian not only gave me my health back, but my entire life back!

We reached the base just as darkness settled in.

It was at that moment, I knew that I was completely free from the power of our culture’s toxic food addiction, and would be committed to eating for health for life.

Well done on climbing that mountain, Emily! I hear this all the time - "I could never give up this or that". That's just not a winning attitude in my book. I've also become a nutritarian and I don't miss my old way of eating at all...

Great Job, Emily! I am currently working with a woman who is obese, and well on her way to becoming a healthy nutritarian. She has lost about 50 pounds and is cooking and shopping at the farmer's markets and exercising at the gym! Her goal is to be able to go kayaking. I know that with the knowledge and skills she now has, she will be kayaking soon! It is so true- your tastebuds come alive when you get them used to eating REAL FOOD. I am a self-professed vegetable addict. I cannot get enough of them. And when I am not eating them, I am reading about them, cooking them or blogging about them!!

Thank you soooo much for your inspirational story. I was a nutritarian for a couple of years almost 10 years ago (before the word was even invented I think!) I slowly but surely added more and more SAD foods into my regular diet and the weight has slowly packed its way back on. I've lost a lot of health and I'm very sad about it. I ate very unhealthy foods today and they tasted good to me. I crave more. But I know the cycle. I know the choice. At times I forget about the hope. I forget that I could conceivably drop 80 pounds off of this body and live a much happier, healthier productive life. I want that life again. Your story brings that to life for me. Thank you!

SAD is such a thief. No mountain tops for SAD eaters. What I love about the nutritarian life style is the SAD food pyramid has changed to a ETL food pyramid. I too like Matt had prior success with ETL and not realizing the ramifications the social addiction of SAD allowed myself to be thrown off track. I had lost all my weight and I had regained it all plus. When I restarted ETL I weighed approximately 250 and now after almost a year later I am at 170. Because of my prior weight loss I knew the weight was just a symptom of the SAD addiction.

What really assisted me this time around I committed to posting about my desire to regain a ETL lifestyle. Dr. Fuhrman has created a virtual community of support. My community then became pluralistic. I had a place where I was accepted. This feeling of acceptance is like is like the stream that flows down the mountain top into a SAD community. My three adult children had witnessed my prior success with ETL and encouraged me to go back to doing the smoothies:)

This time around my son who is a teacher, really embraced ETL. His girlfriend had food allergies so he had a new perspective on SAD. He had about 20 lbs to loose but it is was that last 20 lbs which can be the hardest. When the other teachers asked, "How did you do it?" He said, "I did what Dr. Fuhrman says. I begin my meal with a huge salad." His nephews told their mother, "He looks really good." Then they asked, " How old is he? " My daughter just gave a sigh, as she struggles with ETL but the seed is planted. My son always liked vegetables and never really fitted in a SAD community. My daughter's father in-law medication was decreased after embracing a ETL life style. Hopefully more will be decreased as ETL takes effect.

Emily gives a wonderful perspective of how effective ETL is. We are no longer invisible. We spiral up to the top of the mountain, because a synergy happens with ETL, and like all nature everything looks up. We are blessed with a pluralistic society, where health overrides culture. We can post or dreams and see them come to life while practicing ETL. love patty

Emily - as you know I have been following your posts from start to present time. You are such a wonderful inspiration to us all. My husband and I have been following Dr. Fuhrman's nutritarian style of eating for some time now. We started out very gradually but are now fully on the bandwagon. It looks like my husband may be able to stop his blood pressure medicine. We are hopeful that he will soon be able to stop his Cholesterol medicine. This would be so much better for his health AND our wallet!! Some people look at this way of eating as expensive, but when you consider what you gain in health and savings on medicines and doctor bills.........priceless!!!

I highly recommend that everyone follow along with Emily as she had truly turned her life around and gained beautiful glowing health as a result. Again, Emily, you are such a wonderful inspriation!

Regarding giving up pizza---people have no idea how much their tastes will change, or how much they will love their food, when they adopt a nutritarian way of eating. I wish there was some way to truly communicate that.

I used to love pizza, ice cream cones (esp cappuchino chunky chocolate), egg rolls at the Chinese restaurant (plus hot & sour soup), fried appetizers at the Indian restaurant (samosas).
I would have cried if you had told me the way I'd be eating today.

But now, a total nutritarian, I'm happier than I've ever been before in my life, and I absolutely love the food dh and I eat. I don't feel deprived in the slightest. My frustration is that I can't communicate how possible the change is, or what a wonderful array of delicious foods that nutritarians eat.

Emily, what a great reward for all the healthy changes you have made---being able to twice climb to the summit. Many thanks for the photo.

So glad to hear you're mountain climbing. How far you've come my friend.
As for craving SAD food...well I have ZERO craving for soda, beef, chicken or pork since I've been a Nutritarian. And that is a miracle! I drank soda every day, several times a day for YEARS! I'd quit then start again in a week. But that craving is completely gone. I haven' missed meat at all. And I was sure I would.

I still eat pizza...my hubby and I make it better because we make it ourselves. We warm up a whole wheat pita, spread no-salt tomato sauce on it and then top it with TONS of fresh veggies. Pop it back in the oven to warm all of the ingredients and YUM! Who wants greasy old, stale pizza with mystery meat on top of it? YUCK!

As I said ...I'm not perfect but I'm always moving forward. I will never give up this style of eating.

Besides, SAD food is so horribly disappointing once your tastebuds change, so why bother.

Good job Emily! Thank you for posting your inspiring story.

Simply amazing the changes that have taken place in your life in just a year and what a great testament in your double climb of Devil's Lake. I know the power of Eat To Live/Eat For Health and how it has worked in your life and lives of others. The power of not having cravings, the power of not wanting pizza, coke, fast food, grease, sugar and other toxic, disease causing, non-food stuffs.

I can feel your excitement of being able to move and live life to the fullest, it is, to say the least, contagious and practically jumps off the page at you.

So, here's to good health, good greens, hiking, biking, moving and LIVING!

I thought I'd chime in as another person who formerly ate loads of cheese, meat, fried foods, cream sauces, and butter on everything. I considered myself a gourmet cook, and would have scoffed at the idea of giving up all that rich, delicious food for "health food." However, I saw myself in a vacation photo one day and realized that fifty pounds overweight, bordering on obese, really did show. Mortified, I tried weight loss shakes, I tried special diet foods, I tried Atkins, I tried every trick I could find, and all made me miserable. I'd lose a little weight, only to gain it back in a few weeks, often feeling sick or deprived (= angry!) along the way.

Eat To Live changed all that. I viewed it as an experiment, and had no expectations that I could eat so "spartan" for the long term. But, I tried the vegan version of Eat To Live for six weeks, then felt so good I went a few more weeks, then months, then a year. I was shocked to find my tastes DID change. I could stand next to a plate of cookies or cheese and have no more interest in eating them than in eating the nice-smelling floral centerpiece on the table. Mind-blowing. I grew to love --really LOVE -- the taste of kale, brussels sprouts, vegetables and fruits of all kinds. Without grease or salt on them!

Since then, I have stayed on ETL. My weight has been steady for four years at my ideal, and I can now have SAD foods occasionally without wrecking what I've created. I will never, ever again go on a diet, fret about my weight, or worry about my arteries or other diet-related health problems. I'm free of that whole category of stress. I love and look forward to cooking and eating at least as much as I used to, but now I know the way I eat is helping me stay trim, energetic, bright, and happy.

I wish more people would become informed about eating right -- the way nature intended, IMO.
